Eats: Seared Ahi Tuna Recipe

May 17, 2011 by

It’s been awhile since I posted a recipe here and since I’m on the Clean Cleanse I thought I would share exactly what I’ve been eating.

The nice thing about this cleanse is I actually don’t feel deprived because I can have a really delicious meal for lunch. I can cook with oil and so everything can have flavor. It’s not fat free, which I despise. There’s nothing worse than a grumbling stomach and then having to look forward to eating cardboard.

I don’t feel this way on this cleanse.

So here’s what I had for lunch yesterday and the super simple recipe for the Seared Ahi Tuna from Simply Recipes:

My clean cleanse lunch, Day 17

Looks tasty right?  Spinach greens, seared ahi tuna, roasted beets tossed in a olive oil and white balsamic vinegar vinaigrette topped with sesame seeds.

Not bad for a cleanse I think…

The tuna was fresh from the Farmer’s Market and was out of this world. The kids and hubby had it the night before (while I enjoyed my soup) and they loved it too. For the kids pieces I cooked it more thoroughly but Alex and I love seared tuna.

Here’s the amazing recipe I found online at Simply Recipes. Luckily, I had all the ingredients (except the green onions) in my fridge.

NOTE: For the cleanse version, you can not use soy sauce, it has to be the wheat-free tamari sauce.

TIP: Did you know you can freeze fresh ginger in your freezer?

Enjoy!

Seared Ahi Tuna Recipe

  • Prep time: 1 hour, 5 minutes
  • Cook time: 5 minutes

INGREDIENTS

  • 2 (6-8 ounce) ahi tuna steaks (3/4 of an inch thick)
  • 2 Tbsp dark sesame oil
  • 2 Tbsp soy sauce (or 2 teaspoons of wheat-free tamari for gluten-free option)
  • 1 Tbsp of grated fresh ginger
  • 1 clove garlic, minced
  • 1 green onion (scallion) thinly sliced (a few slices reserved for garnish)
  • 1 teaspoon lime juice

METHOD

1 Mix the marinade ingredients together and coat the tuna steaks with the marinade, cover tightly, and refrigerate for at least an hour.

2 Heat a non-stick skillet over medium high to high heat. When the pan is hot, remove the tuna steaks from the marinade and sear them for a minute to a minute and a half on each side ( even a little longer if you want the tuna less rare than pictured.)

3 Remove from pan and slice into 1/4-inch thick slices. Sprinkle with a few green onion slices.

Me and Gwyneth, Cleansing Together

Apr 25, 2011 by

At this point it’s probably a little too late to do anything about the vast amounts of Cadbury Easter Eggs I’ve consumed in the last 24 hours.

The good news is I have one more week to indulge before I attempt to do another Clean cleanse. Yes, I’m going to try it again.  The day AFTER my birthday I will start anew. My second attempt at completing the Clean Cleanse.

Lord help me.

Last time, I made it to 14 out of 21 days. It was a loooong 14 days and on Day 2 I nearly called an ambulance because I felt so sick from caffeine withdrawal. I crawled into bed at 6:30 PM and prayed that I would fall asleep. It was brutal. By Day 4 I was feeling great and into the swing of things. There were great resources online and I had fun trying out the “clean” recipes.

The Clean Cleanse is by Dr. Alejander Junger and has been endorsed by the likes of Gwyneth Paltrow. (Love her or hate her, you gotta admit the girl looks ridiculously fabulous ALL the time!) It basically involves a liquid breakfast (smoothie) a solid lunch and a liquid dinner. Lots of water throughout the day, an organic diet and no dairy, red meat, wheat, alcohol to name a few of the exclusions.

It’s not as bad as it sounds once you come out of the initial stages of detox. For me I found I could have satisfying meals because I could still cook with olive oil and not sacrifice flavor. It’s an interesting experiment and it’s really fascinating to see how your body responds.

So why did I only make it to Day 14? Well, my husband and I had a weekend on the books for some time away together sans kiddos. Three days alone, where technically we did not have to cook and we could enjoy grown-up restaurants together. It was too hard to pass that up.

So when we arrived on Friday evening and I had a 90 minute massage.

YES, that’s right. Ninety minutes…of pure heaven…   When I met my husband at the bar, I was more than ready to enjoy someone else’s cooking and that martini.

So I did. And I don’t regret going off the cleanse.

After 14 days of cleansing, I was a cheap date.

But I’m ready to try again.

My results last time were an 8 pound weight loss and my skin cleared right up. I never got a huge surge of energy like I’ve heard about but I was sleeping way better.

Anyway, I’m excited to try it again and to finish it.

If anyone wants to sign-up with me, May 1st is the day. I should be plenty ready to cleanse by then after all the royal wedding festivities and my birthday. This will also mark the kickoff for training walks for my Maidens for Mammograms and Margaritas team in preparation for the 3 Day. But I guess we won’t be having a margarita until AFTER I finish the cleanse. HA!

You can read about the Clean Cleanse here and also on Gwyneth’s blog, GOOP, yes this is THE cleanse GP does too. (Don’t hate me for this one please!).
